The History of Recipes
Experts have traced the existance of recipes back into antiquity, certainly as far as pharonic Egypt, and maybe further still. Interesting though that maybe, generally, these early cook books were just primitive pictorial instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to historians are some tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. During Roman times 25BC a man called Apicius compiled a collection of scripts detailing recipes prepared by wealthy Romans. In his publication, Apicius recounts how the meals were split into appetizers, main course and dessert, a style of dining still practiced today. Aspicius tells us how the Romans used a wide range of aromatic flavors, including a few that will be familiar to modern cooks such as basil, rue and parsley. Closer to modern times, there are a couple of cookery books which were published in the 14th Century ; one book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these two books are unconnected to the indian food that is popular today, but rather accounts of the types of food on the tables of the upper classes of that time. In the fifteenth century, the Crusaders brought back a variety of foods and herbs from Arab cuisine, including rosemary and coriander. These new spices and herbs led to a torrent in publications on food, many of which are now in private cookery archives. During the succeeding few centuries, the wealthy families of the West competed to lay on the most extravagent meals, and because of this the best cooks and their recipe collections were much in demand. Even so, it was during the nineteenth century that fine cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and publishing popular recipes of the day. By the arrival of the 1900s, cooking books were highly popular mostly as a result of higher levels of literacy, people having more leisure time and having more money. Like it or not, the introduction of television brought us TV cooks and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on sites such as this. |
