The History of Recipes
Written recipes as an idea can be traced far back into the far past, at least as far back as the early Egyptians, and quite possibly further than that. In practice though, these, ancient recipes were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe discovered, according to experts is a series of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Later on, in The time of the romans 25BC a roman called Apicius created a number of documents detailing recipes enjoyed by his fellow Romans. In his works, he tells us how the roman meals were split into hors d`oeuvre, entrees and afters, something that is very familiar to us today. This early Roman chef recounts how the ancient chefs used a good variety of aromatic flavours, including a few that are still present in modern kitchens such as bay, mint and parsley. Continuing our culinary historical journey, we find two recipe books dating from the fourteenth century : a recipe book called `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these are nothing to do with the curry that appears on menues today, but instead accounts of the types of meals prepared by the cooks of the rich and wealthy people of that time. Later on, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the holy land, including spices like basil and rosemary. The introduction of these new tastes prompted a surge in manuscripts on cooking, some of which are kept safe in private cookery archives. Over the succeeding few centuries, the families of Europe competed to serve up the most exotic banquets, and consequentially the best chefs and their collection of recipes were highly sought after. However, it wasn`t until the 1800s that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, trying out, and recording popular recipes of the day. When we get to the 20th century, cookbooks were highly popular mostly due to better eduction, people having increased free time and disposable income. The TV revolution gave us TV cooks and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes such as those found on our site. |
