The History of Recipes
It is quite feasible to trace the history of recipes way back into antiquity, in fact as far as the ancient Egyptians, and quite possibly further than that. However, generally, these old records were just simple pictorial recipes for food preparation.
Progressing into The time of the romans 25BC a man called Apicius created a number of documents which described recipes enjoyed by the Romans. In his works, Apicius tells us how the roman meals were separated into starters, entrees and desserts, a style of dining still practiced today. Aspicius informs us how the ancient chefs used many herbs, including some that we all recognise such as thyme, fennel and dill. Over the next few centuries, the rich families of Wesstern Europe tried to serve up the most exotic banquets, and as a consequence, cooks and their collection of recipes increased in prestige. Even so, it was during the 1800s that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, verifying, and recording the recipes that were being prepared for the better households. By the arrival of the twentieth century, cooking publications are increasing in popularity mostly due to more people being able to read, more free time and a general increase in wealth. |
