The History of Recipes

Food historians have tracked the existance of recipes far back into the distant past, certainly as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that is, mostly, these early records were just very simple hieroglyphic or cunieform instructions for food preparation.

Interestingly, the oldest recipe in existence, according to historians is a collection of tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful.

During Roman times around 25BC a roman called Apicius created a few documents detailing recipes prepared by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main course and dessert, a very modern way of dining. Aspicius tells us how the Roman chefs made use of a good variety of herbs and spices, including a few you will know such as basil, mint and dill.

In the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from Arab countries, including spices like coriander, parsley, basil and rosemary. These new foods and tastes prompted a torrent in manuscripts on food, most of which are now in academic collections.

During the succeeding few hundred years, the upper classes competed to serve the most exotic banquets, and as a consequence, the best chefs and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century that formal cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and writing down popular recipes of the day.

Like it or not, the introduction of television gave us TV cooks and the accompanying recipe books.

And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes such as those found on our web site.
