The History of Recipes
Recipes as a concept can be found back into ancient history, in truth as far back as early Egypt, and possibly even further. However, in the main part, these ancient cookbooks were just simple hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe discovered, according to experts in ancient history are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a man called Apicius created some documents which described recipes cooked by the Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the cooks of his times used a good variety of herbs and spices, including a few that will be familiar to modern chefs such as basil, mint and parsley. Continuing our culinary historical journey, we have two interesting recipe books which appeared in the 1300s - a book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these books have no connection with the curry that is served today, but instead descriptions of the types of meals served to the rich people of those days. Later on, in the 15th century, knights returning from the crusades brought back many new foods and herbs from the holy land, including spices such as coriander, basil and rosemary. These new herbs and spices created an outbreak in publications on food, the majority of which are kept safe in academic collections. Over the succeeding few centuries, the rich families of the West tried to offer the most extravagent meals, and consequentially chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that fine cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, verifying, and publishing the recipes that were being prepared for the better households. When we get to the twentieth century, cooking publications were starting to become popular mostly as a result of better eduction, more spare time and a general increase in wealth. The TV revolution brings us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everyone to access thousands of recipes such as those found on our site. |
