The History of Recipes
It is possible to read the history of meal recipes far back into distant history, in fact as far as the ancient Egyptians, and maybe even further. Having said that, mostly, these ancient records were just basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Closer to modern times, there are two books which date from the fourteenth century : a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are nothing to do with the indian curry that is popular today, but instead descriptions of the types of meals prepared by the cooks of the upper classes of the time. Later, in the 15th century, knights returning from the crusades brought us many new spices and herbs from Arab cuisine, including coriander, parsley, basil and rosemary. These new foods and tastes created a surge in books on cookery, many of which are kept safe in academic collections. During the next few hundred years, the wealthy families of Wesstern Europe strove to lay on the most exotic banquets, and because of this the best cooks and their collection of recipes were highly sought after. However, it wasn`t until the 1800s that cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe publications are starting to become popular mostly due to higher levels of literacy, more leisure time and being a little richer. Like it or not, the introduction of TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to access thousands of recipes just like those on this web site. |
