The History of Recipes
Recipes as an idea can be tracked way back into antiquity, in truth as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that is, sadly, these ancient recipes were just very basic hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, are some tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Progressing into Roman times 25BC a roman called Apicius compiled a number of documents which described recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals were separated into starters, main course and afters, something that is very familiar to us today. Additionally, he informs us how the cooks of Roman times used many different spices, including a few that are still present in modern kitchens such as basil, mint and dill. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from the East, including spices such as basil and coriander. These new foods and tastes was responsible for a torrent in manuscripts on food, some of which still exist in private cookery archives. When we get to the 20th century, cookery books were increasing in popularity mostly due to increased literacy, leisure time and being a little richer. The TV revolution brings us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to access thousands of recipes like those on this recipe site. |
