The History of Recipes

Food historians have tracked the existence of recipes way back into distant history, in truth as far into history as ancient Egypt, and maybe further still. Having said that, sadly, these old recipes were just basic hieroglyphic or cunieform instructions for meal preparation.

Fascinatingly, the most ancient recipe in existence, according to historians is a series of stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`.

As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents which described recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the Roman chefs made use of a good variety of spices, including a few that will be familiar to modern chefs for example thyme, rue and asafoetida.

In the 15th century, knights returning from the crusades brought back many new spices and herbs from Arab countries, including basil and coriander. These new spices and herbs created a surge in recipe books, the majority of which are now in private collections.

By the arrival of the twentieth century, cookery publications were starting to become popular mostly due to more people being able to read, people having more leisure time and having more money.

The introduction of television brings us celebrity TV chefs and the recipe books that accompanied them.

And that pretty much brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes such as those found on this web site.
