The History of Recipes
Written recipes as a concept can be found far back into the far past, in truth as far as early Egypt, and possibly even further than that. However, generally, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Moving our culinary historical trip onwards, we find two interesting cookery books which appeared in the 14th Century ; one book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are nothing to do with the indian curry that we all know today, but rather descriptions of the types of meals prepared by the chefs of the upper classes of those days. Later on, in the 15th century, people returning from the crusades brought back many new foods and herbs from the Middle-East, such as rosemary and coriander. These new foods and spices caused an outbreak in books on cookery, the majority of which still exist in private collections. Over the next few hundred years, the powerful and rich tried to lay on the most extravagent meals, and as a result cooks and their recipe collections were greatly in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. When we get to the 20th century, cookbooks are increasing in popularity mostly as a result of increased literacy, people having more free time and being a little richer. The arrival of TV gave us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes just like those on sites such as the one you are reading now. |
