The History of Recipes
It is quite feasible to trace the history of recipes way back into antiquity, in fact as far back into recorded history as the early Egyptians, and maybe even further. In practice though, mostly, these old recipes were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics is a collection of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As we move into Roman times around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes prepared by the Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into appetizers, entrees and afters, a very modern way of dining. Additionally, he describes how the early Romans made use of many different herbs, including a few that are still present in modern kitchens for example bay, fennel and parsley. Later, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from Arab cuisine, including spices such as rosemary and coriander. The introduction of these new tastes led to a surge in manuscripts on cooking, the majority of which are now in private libraries. During the following few centuries, the rich and powerful families of Wesstern Europe strove to lay on the best banquets, and because of this chefs and their recipe collections were at a premium. Notwithstanding that, it was during the 1800s that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, verifying, and recording recipes of the day. By the advent of the 1900s, cookery books were starting to become popular due to higher levels of literacy, increased leisure time and having more disposable income. The revolution that is television brings us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through massive numbers of recipes like those on the site you are now reading. |
