The History of Recipes
It is actually possible to trace the history of written cooking instructions back into antiquity, in truth as far as pharonic Egypt, and possibly even further than that. Having said that, sadly, these old records were just basic pictorial recipes for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. During Roman times 25BC a man called Apicius created some documents which described recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the roman meals were split into starters, main course and afters, a style of dining still practiced today. Additionally, he describes how the Roman cooks used a good variety of herbs, including a few you will know like bay, fennel and parsley. In the fifteenth century, knights returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new herbs and spices was responsible for a torrent in manuscripts on cooking, many of which are kept safe in academic collections. During the succeeding few centuries, the rich families of the West tried to serve the most exotic banquets, and because of this the best chefs and their recipes increased in prestige. Even so, it was during the nineteenth century that cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, verifying, and writing down recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking publications were increasing in popularity mostly due to higher levels of literacy, people having increased leisure time and a general increase in wealth. Like it or not, the introduction of television brings us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on the site you are now reading. |
