The History of Recipes
We are able to follow the history of written recipes way back into the far past, certainly as far back into recorded history as ancient Egypt, and maybe even further. In practice though, these, ancient cookbooks were just simple hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. As we move into The time of the romans 25BC a roman called Apicius wrote a number of documents describing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Roman cooks used a wide range of aromatic flavors, including some that we all recognise such as basil, fennel and parsley. Later, in the 15th century, people returning from the crusades brought back many spices and herbs from middle-east cuisine, including parsley and basil. The introduction of these new herbs and spices prompted a torrent in publications on food, the majority of which are kept safe in private cookery archives. By the time we get to the twentieth century, cook books were in high demand, mostly due to higher levels of literacy, people having more leisure time and being a little richer. Like it or not, the introduction of TV gave us cooking programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes just like those on sites such as this. |
