Ingredients

12 each green onions, chopped coarse
2 each med. whole tomatoes, chopped medium
1 each cilantro leaf, chopped fine
2 tbsp lemon juice from concentrate


Directions

Combine all ingredients and refrigerate at least an hour. Best if
served over fajitas with sour cream and freshly grated cheddar. Use
the cilantro judiciously! It is easy to overpower the remaining
ingredients.

Over the next few hundred years, the powerful and rich houses tried to serve up the most exotic banquets, and consequentially the best chefs and their recipe collections could command a high salary. Notwithstanding that, it was during the nineteenth century that cookery and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collating, trying out, and publishing recipes to help cooks of their time.

When we get to the 20th century, cook books were starting to become popular mostly due to better eduction, people having increased spare time and having more money to spend.

The arrival of TV gave us celebrity TV chefs and the accompanying recipe books.
