The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into distant history, in fact as far back into history as the ancient Egyptians, and maybe even further. In practice though, sadly, these early cook books were just very simple hieroglyphic recipes for preparing meals.
Later on, in The time of the romans 25BC a roman called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. He tells us how the meals of wealthy Romans were divided into appetizers, entrees and afters, a style of dining still practiced today. Additionally, he informs us how the early Romans used a good variety of herbs and spices, including some familiar names for example bay, fennel and dill. Over the succeeding few centuries, the powerful and rich strove to serve the most exotic banquets, and consequentially chefs and their recipe collections were greatly in demand. Notwithstanding that, it was during the 1800s the formal cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and writing down recipes common in their social group. When we get to the 20th century, cookbooks are greatly in demand mostly due to better eduction, leisure time and having more money. |
