Ingredients

5 cup apples (cooked and mashed)
5 cup sugar
2 tbsp vinegar


Directions

Boil applesauce on high heat, then add sugar and vinegar. I hold the
cinnamon until last 1/2 hour because I think it evaporates some. Cook
on high heat (about 4 hours) until the apple butter is as thick as
you want it when you cool and serve.

He also describes how the chefs of Roman times were skilled in the use of many different aromatic flavours, including a few that will be familiar to modern chefs for example thyme, mint and dill.

Moving on, there are two recipe books from the 1300s : a book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the indian curry that is served today, but instead descriptions of the types of food enjoyed by the rich and powerful of that time.

Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, such as parsley, basil and rosemary. The introduction of these new foods and spices created a torrent in recipe books, the majority of which are kept safe in academic collections.

Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books.
