5 cup apples (cooked and mashed)
5 cup sugar
2 tbsp vinegar
Directions
Boil applesauce on high heat, then add sugar and vinegar. I hold the
cinnamon until last 1/2 hour because I think it evaporates some. Cook
on high heat (about 4 hours) until the apple butter is as thick as
you want it when you cool and serve.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions back into history, certainly as far back into history as the Egyptians, and possibly even further. Having said that, in the main part, these old records were just basic hieroglyphic recipes for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts in ancient history is a collection of tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius compiled a few scripts detailing recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the chefs of Roman times were skilled in the use of many different aromatic flavours, including a few that will be familiar to modern chefs for example thyme, mint and dill. Moving on, there are two recipe books from the 1300s : a book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the indian curry that is served today, but instead descriptions of the types of food enjoyed by the rich and powerful of that time. Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, such as parsley, basil and rosemary. The introduction of these new foods and spices created a torrent in recipe books, the majority of which are kept safe in academic collections. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like those on sites such as the one you are reading now. |
