1 pie crust, single crust
3/4 cup sugar
1/4 cup corn starch
3 eggs
1/2 cup butter or margarine, melted
1/2 cup corn syrup, light or dark
1/4 tsp almond extract
2 cup apples, peeled and chopped
1 cup almonds, toasted and sliced
1 apple, peeled & sliced thin
2 tbsp almonds, toasted and sliced
= GARNISH
~ PREPARE PIE CRUST FOR FILLE
Directions
one-crust pie using 9-inch pan. Flute edge. Heat oven to 375F.
Reserve 2 T sugar. In medium bowl, combine remaining sugar and corn
starch.
Add eggs, beating well to combine. Stir in butter, corn syrup and
almond extract. Mix in apples and almonds. Pour into pie crust-lined
pan. If desired, garnish with apple slices overlapped in a circle
around edge of pie. Sprinkle center with almonds. Sprinkle reserved
sugar over top. Bake at 375F for 50 minutes or until center of pie is
set. Cool completely on wire rack. Store in refrigerator.

The History of Recipes
Experts have tracked the existence of recipes back into ancient history, at least as far back into history as pharonic Egypt, and possibly even further than that. However, sadly, these ancient records were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the oldest recipe discovered, according to academics are some ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. As our culinary historical trip moves to more modern times we have some recipe books which were published in the 14th Century ; a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books are not about the spicy food that is popular today, but rather descriptions of the types of meals on the menus of the rich and wealthy people of that period. Over the next few centuries, the rich families of the West competed with each other to offer the most extravagent meals, and consequentially cooks and their recipe collections were much in demand. Nevertheless, it was during the nineteenth century that cooking and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, verifying, and writing down the recipes of their peers. The introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on the site you are now reading. |
