The History of Recipes
Written cooking instructions as a concept can be traced far back into the far past, in truth as far into history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, in the main part, these old cookbooks were just basic hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to historians is a collection of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius created some documents which described recipes cooked by wealthy roman citizens. In his works, he describes how the meals were separated into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of Roman times made use of a wide range of spices, including a few that will be familiar to modern chefs for example bay, mint and asafoetida. As our culinary historical trip moves to more modern times we find two interesting recipe books published in the fourteenth century : one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these are not about the indian curry that is served today, but instead recipes for the types of meals cooked for the rich and wealthy people of the period. In the 15th century, people returning from the crusades brought back many new foods and spices from Arab cooking, including spices like basil and rosemary. These new foods and tastes prompted an increase in books on cooking, the majority of which are now in private collections. When we get to the 1900s, cookbooks are starting to become popular as a result of more people being able to read, people having increased leisure time and having more money. The arrival of TV gave us celebrity TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on this web site. |
