The History of Recipes
Academics have tracked the existence of recipes far back into ancient history, certainly as far into history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, mostly, these ancient recipes were just basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts is a series of clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius created a collection of documents describing recipes cooked by the Romans. He recounts how the meals were split into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Aspicius recounts how the early Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks such as basil, fennel and dill. In the 15th century, people returning from the crusades brought us many foods and spices from middle-east cuisine, including spices like parsley, basil and rosemary. The introduction of these new herbs and spices caused an increase in recipe manuscripts, many of which are now in private cookery archives. Over the next few centuries, the rich and powerful families of the West competed with each other to lay on the most extravagent banquests, and because of this the best chefs and their collection of recipes became highly prized. Even so, it wasn`t until the nineteenth century that fine cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and publishing the recipes that were being prepared for the better households. By the arrival of the twentieth century, cookery books are in high demand, as a result of higher levels of literacy, people having increased spare time and disposable income. The introduction of television gave us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes just like those on this recipe site. |
