The History of Recipes
It is possible to track the history of meal recipes back into the far past, in fact as far into history as early Egypt, and possibly even further. Interesting though that maybe, in the main part, these early records were just basic pictorial recipes for preparing food.
Interestingly, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During Roman times 25BC a man called Apicius compiled some scripts describing recipes enjoyed by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main course and dessert, something we still use today. Aspicius recounts how the ancient Romans used many different herbs, including a few that are still present in modern kitchens like bay, fennel and asafoetida. Closer to modern times, we have two interesting books which date from the 14th Century - a book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these are not about the curry that is familiar to us all today, but instead descriptions of the types of food on the menus of the rich and powerful of the time. In the fifteenth century, knights returning from the crusades brought us many spices and herbs from Arab countries, such as coriander, parsley, and rosemary. These new herbs and spices caused a torrent in publications on food, many of which are now in academic collections. Like it or not, the introduction of television brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on the site you are now reading. |
