The History of Recipes
We can read the history of written recipes way back into distant history, at least as far as pharonic Egypt, and possibly even further than that. Interesting though that maybe, in the main part, these ancient cookbooks were just simple pictorial recipes for preparing food.
In an interesting twist, the most ancient recipe discovered so far, according to academics is a collection of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Moving our culinary historical trip onwards, we find a couple of interesting cookery books published in the fourteenth century ; a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these books are unconnected to the indian food that appears on menues today, but rather recipes for the types of meals on the tables of the upper classes of those days. In the 15th century, people returning from the crusades brought back many new foods and spices from Arab cuisine, including spices like rosemary and coriander. These new herbs and spices caused an eruption in recipe publications, some of which still exist in private collections. Over the next few hundred years, the powerful and wealthy tried to serve the most extravagent banquests, and because of this the best chefs and their recipe collections were at a premium. Even so, it wasn`t until the 19th century that haute cuisine and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes to allow everyone to enjoy them. The arrival of TV gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like the ones you can find on this web site. |
