BASE
1/2 cup butter, softened
1/3 cup sugar, granulated
1 cup flour, all purpose
1/3 cup jam, raspberry
FILLING
1 package cream cheese, 8 oz
1/4 cup sugar, granulated
1 egg
1 tsp vanilla
TOPPING
3 cup apples peeled & sliced
1/3 cup sugar, granulated
1/2 tsp cinnamon, ground
1/2 cup almonds, sliced
Directions
Preheat oven to 450F. Cream butter and sugar together thoroughly.
Blend in flour. Press evenly onto bottom and 1 1/2" up sides of 8
1/2" springform pan. Spread jam evenly over the bottom the crust.
Beat all filling ingredients together with the electric mixer till
smooth and light. Spread over jam. Toss apples, sugar and cinnamon
together to coat well. Spoon over filling. Sprinkle with almonds.
Bake at 450F for 10 minutes, then reduce heat to 400F for 25-30
minutes or till set and apples are tender. Cool slightly and remove
pan rim.

The History of Recipes
It is quite possible to prove the history of written cooking instructions far back into the distant past, at least as far back into history as pharonic Egypt, and possibly even further than that. However, mostly, these old records were just very simple hieroglyphic recipes for preparing food.
Interestingly, the most ancient recipe discovered, according to experts are a few tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. During Roman times 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were split into starters, entrees and dessert, a style of dining still practiced today. He also describes how the early Romans were skilled in the use of a wide range of aromatic flavours, including a few you will know for example bay, mint and dill. Closer to modern times, there were some interesting books which were published in the 14th Century ; a recipe book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, they are nothing to do with the indian food that is popular today, but instead descriptions of the types of meals on the menus of the rich and wealthy people of those days. Later, in the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the holy land, such as rosemary and coriander. These new foods and spices was responsible for a surge in publications on food, many of which are kept safe in academic collections. By the time we get to the twentieth century, cookery publications were greatly in demand mostly as a result of better eduction, more free time and disposable income. |
