1 qt cider vinegar
3 cup sugar
1/2 lb seedless raisins
6 lb very tart apples (sour)*
1/4 lb garlic peeled and chopped
1/2 lb gingerroot, peeled & chopped
6 each red or green chili peppers**
2 tbsp pickling salt
1 sugar to taste
1 cayenne to taste
6 lb hard green pears ***

The History of Recipes
Written cooking instructions as a concept can be observed far back into history, at least as far back as ancient Egypt, and quite possibly further than that. In practice though, mostly, these early cookbooks were just primitive hieroglyphic or cunieform instructions for preparing food.
During the time of the Romans a roman called Apicius wrote a number of documents detailing recipes cooked by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius also informs us how the chefs of Roman times were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks like bay, fennel and dill. Over the next few hundred years, the powerful and rich houses competed to serve up the most exotic meals, and consequentially the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe collections really came of age. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes that were common in the better off homes of the day. The arrival of TV gave us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes just like those on this recipe site. |
