The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into distant history, at least as far back as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, generally, these early recipes were just simple hieroglyphic recipes for preparing food.
Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. As we move into The time of the romans 25BC a roman called Apicius assembled a few documents detailing recipes cooked by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvres, main course and desserts, a style of dining still practiced today. Additionally, he tells us how the chefs of Roman times made use of many spices and herbs, including many that are still in use today such as bay, mint and dill. Closer to modern times, there were two recipe books published in the fourteenth century : one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these books are not about the indian curry that is popular today, but rather accounts of the types of meals cooked for the rich and powerful of the time. Later, in the 15th century, knights returning from the crusades brought back many foods and spices from the holy lands, including spices like basil and rosemary. The introduction of these new culinary ideas caused an increase in books on cookery, many of which still exist in private cookery archives. By the time we get to the twentieth century, cookery publications were in great demand, as a result of better eduction, people having increased free time and being a little richer. |
