The History of Recipes
Academics have tracked the existence of recipes back into history, in truth as far back into history as the early Egyptians, and quite possibly further than that. In practice though, in the main part, these ancient cook books were just basic pictorial instructions for meal preparation.
As we move into The time of the roman empire 25BC a man called Apicius created some scripts describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, main meal and afters, something we still use today. Aspicius tells us how the chefs of Roman times made use of a wide range of spices and herbs, including some that we all recognise such as thyme, mint and dill. During the succeeding few hundred years, the powerful and rich houses tried to serve the most exotic meals, and because of this the best chefs and their collection of recipes increased in prestige. Nevertheless, it was during the 1800s that formal cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, testing, and writing down recipes common in their social group. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes like those on this site. |
