4 cox's apples, cored, peeled and sli, ced
4 tbsp orange juice
6 oz brown sugar
4 oz butter
1 large egg, beaten
8 oz plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
4 oz fresh dates, chopped
2 oz walnut pieces
Directions
Preheat oven to 190C/375F/Gas Mark 5.
Grease a 12 by 7 inch baking tin.
Place apples and orange juice in a pan. Cover and cook over a low
heat for 10-12 minutes until soft. Mash to Form a puree.
In a bowl, beat sugar and butter until light and creamy. Beat in egg
and apple puree. sift in flour, bicarbonate of soda, salt, baking
powder and cinnamon. Fold in the chopped dates and walnuts.
Pour cake mixture into prepared tin and bake in preheated oven for 40
minutes until risen and form to the touch.
Allow to cool and cut into 12 squares.

As we move into The time of the romans around 25BC a roman called Apicius created a collection of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into starters, main course and desserts, something that is very familiar to us today. He also describes how the Roman cooks made use of many different herbs and spices, including a few you will know such as thyme, mint and parsley. Later, in the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from the East, such as coriander, parsley, and rosemary. The introduction of these new tastes was responsible for a torrent in books on cookery, some of which are kept safe in private libraries. During the next few centuries, the upper classes strove to serve the most exotic banquets, and as a result cooks and their recipes could command a high salary. Notwithstanding that, it was during the nineteenth century that cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down popular recipes of the day. By the advent of the 20th century, cookery books are greatly in demand mostly due to increased literacy, more spare time and a general increase in wealth. |
