The History of Recipes
It is quite possible to prove the history of recipes back into history, certainly as far back as the early Egyptians, and potentially, even further back. However, generally, these ancient cook books were just very basic pictorial recipes for preparing meals.
During Roman times 25BC a man called Apicius compiled a few scripts describing recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals were divided into appetizers, main meal and desserts, something we still use today. This early Roman chef tells us how the cooks of his times made use of a wide range of herbs and spices, including a few that will be familiar to modern chefs such as bay, rue and parsley. During the succeeding few centuries, the wealthy families of Wesstern Europe competed with each other to lay on the best banquets, and consequentially the best chefs and their recipes were at a premium. Nevertheless, it was during the 19th century that cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, verifying, and publishing the recipes that were being prepared for the better households. Like it or not, the introduction of TV brought us cooking programs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes just like those on our web site. |
