The History of Recipes
Historians have found proof that recipes existed back into distant history, in truth as far back as pharonic Egypt, and possibly even further. Interesting though that is, sadly, these old cook books were just basic hieroglyphic or cunieform instructions for preparing food.
Later on, in Roman times 25BC a man called Apicius compiled a number of scripts which described recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Additionally, he tells us how the ancient cooks made use of a wide range of herbs and spices, including some that we all recognise for example thyme, rue and parsley. During the succeeding few hundred years, the wealthy families of Wesstern Europe tried to offer the most extravagent banquests, and consequentially cooks and their recipe collections were greatly in demand. However, it wasn`t until the nineteenth century that fine cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording recipes common in their social group. By the arrival of the 1900s, recipe publications are starting to become popular as a result of better eduction, more spare time and having more money. |
