The History of Recipes
It is actually possible to trace the history of written cooking instructions way back into the distant past, at least as far back into history as ancient Egypt, and maybe even further. However, these, ancient cookbooks were just very basic hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered, according to food historians are a few clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As we move into Roman times around 25BC a man called Apicius assembled a collection of scripts describing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, something that is very familiar to us today. Aspicius also informs us how the cooks of his times made use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs such as basil, mint and asafoetida. Later, in the 15th century, the Crusaders brought back many foods and herbs from the holy land, including spices such as rosemary and coriander. The introduction of these new foods and spices caused an increase in books on cookery, some of which are now in academic collections. During the following few centuries, the powerful families of the West competed with each other to offer the most exotic meals, and consequentially chefs and their recipe collections could command a high salary. Nevertheless, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. The revolution that is television brought us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on sites such as this. |
