The History of Recipes
Food historians have tracked the existence of recipes back into distant history, in fact as far back as the Egypt of the Pharoahs, and maybe even further. However, mostly, these old cook books were just primitive hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe discovered, according to food historians is a collection of stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As our culinary historical trip moves to more modern times we have some interesting books published in the 1300s - a cookery book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, they are unconnected to the curry that is familiar to us all today, but rather recipes for the types of meals prepared by the chefs of the rich and powerful of that time. In the 15th century, knights returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as coriander, basil and rosemary. These new herbs and spices was responsible for an eruption in manuscripts on cooking, most of which still exist in private libraries. Over the next few centuries, the wealthy families of Europe strove to offer the most extravagent banquests, and consequentially chefs and their recipes could command a high salary. Nevertheless, it was during the 19th century that cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and publishing recipes for their fellow cooks to enjoy. The introduction of television brought us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like the ones you can find on our web site. |
