The History of Recipes

It is quite possible to track the history of written cooking instructions back into the far past, in truth as far back into history as early Egypt, and maybe further still. In practice though, sadly, these ancient cook books were just simple pictorial instructions for meal preparation.

Interestingly, the most ancient recipe discovered so far, according to food historians are some clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`.

Progressing into The time of the romans around 25BC a man called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius describes how the roman meals were separated into starters, entrees and desserts, something we still use today. Aspicius recounts how the cooks of Roman times used many different herbs and spices, including some that we all recognise for example basil, fennel and dill.

Moving on, we have a couple of interesting cookery books which appeared in the 14th Century - a cookery book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the indian curry that is familiar to us all today, but instead recipes for the types of meals served to the upper classes.

Later, in the 15th century, knights returning from the crusades brought us many new foods and herbs from Arab cuisine, including coriander, parsley, and rosemary. These new culinary innovations was responsible for an outbreak in books on cookery, most of which are kept safe in private collections.

During the next few hundred years, the rich families of Wesstern Europe tried to serve the most exotic meals, and because of this the best cooks and their recipes were at a premium. Notwithstanding that, it was during the 1800s that fine cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, verifying, and writing down recipes common in their social group.

By the time we get to the twentieth century, cooking publications are increasing in popularity mostly as a result of higher levels of literacy, people having more leisure time and having more money to spend.
