The History of Recipes
Experts have tracked the existance of recipes way back into ancient history, at least as far as the early Egyptians, and possibly even further than that. In practice though, these, early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe in existence, according to experts in ancient history is a series of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a man called Apicius created a collection of scripts describing recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and afters, a style of dining still practiced today. This early Roman chef tells us how the Roman chefs were skilled in the use of a good variety of herbs, including a few that are still present in modern kitchens for example thyme, fennel and parsley. Closer to modern times, we have two interesting books from the 14th Century ; a book called `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these books are unconnected to the curry that is popular today, but rather recipes for the types of food prepared for the rich people of that time. In the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from Arab cooking, such as parsley and basil. The introduction of these new tastes created a torrent in manuscripts on cooking, many of which still exist in private libraries. During the succeeding few hundred years, the rich families of Europe competed with each other to serve up the best banquets, and as a consequence, cooks and their recipe collections increased in prestige. However, it wasn`t until the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, verifying, and recording recipes common in their social group. By the arrival of the 1900s, cooking publications are in high demand, due to more people being able to read, more free time and a general increase in wealth. |
