5 cooking apples peeled cored
2 cup cottage cheese
1 cup half and half
1/2 cup apple butter
1/2 cup sugar
1/2 tsp ground cinnamon
1/4 tsp ground cloves
2 eggs
Directions
Chop apples into 1/8 to 1/4 inch pieces; set aside. In blender or food
processor, combine 1 cup cottage cheese, 1/2 cup half and half, 1/4
cup apple butter, 1/4 cup sugar, cinnamon, cloves and one egg. Blend
until smooth. Pour into a large bowl. Repeat with remaining cottage
cheese, half and half, apple butter and egg. Combine with previously
pureed mixture. Stir in chopped apples. Pour into ice cream canister.
Freeze in ice cream maker according to manufacturer's directions.
Makes 2 quarts.

The History of Recipes
Historians have proved the existence of recipes way back into the distant past, at least as far into history as the Egypt of the Pharoahs, and maybe even further. Having said that, sadly, these early recipes were just basic hieroglyphic or cunieform instructions for food preparation.
Progressing into The time of the romans 25BC a man called Apicius assembled a collection of scripts detailing recipes cooked by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and afters, a style of dining still practiced today. Additionally, he informs us how the cooks of Roman times were skilled in the use of many spices, including a few that are still present in modern kitchens such as bay, fennel and dill. Over the next few centuries, the powerful families of the West competed to offer the most extravagent banquests, and as a consequence, chefs and their recipe collections were at a premium. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe collections really came of age. Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collecting, testing, and recording the recipes that were being prepared for the better households. By the arrival of the twentieth century, recipe books are in great demand, as a result of more people being able to read, leisure time and having more disposable income. |
