The History of Recipes
It is quite possible to track the history of recipes far back into history, in fact as far into history as the Egyptians, and quite possibly further than that. However, mostly, these early cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to experts is a collection of stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. During Roman times 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, Apicius tells us how the meals were separated into hors d`oeuvres, main course and afters, something that is very familiar to us today. He also informs us how the ancient chefs were skilled in the use of a good variety of herbs, including a few that are still present in modern kitchens such as bay, rue and asafoetida. During the succeeding few centuries, the powerful and rich houses strove to serve up the best banquets, and as a consequence, the best chefs and their collection of recipes were highly sought after. Even so, it wasn`t until the nineteenth century that cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and recording popular recipes of the day. By the time we get to the twentieth century, cook books were greatly in demand due to more people being able to read, people having increased free time and disposable income. |
