The History of Recipes
Historians have tracked the existence of recipes back into antiquity, in truth as far back into history as the early Egyptians, and quite possibly further than that. However, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered so far, according to food historians is a series of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main course and afters, something that is very familiar to us today. Additionally, he informs us how the ancient Romans used a wide range of spices and herbs, including a few that will be familiar to modern chefs for example thyme, mint and parsley. Over the next few centuries, the wealthy families of the West tried to serve up the most exotic banquets, and because of this the best chefs and their recipes were at a premium. Even so, it wasn`t until the nineteenth century that cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and publishing recipes common in their social group. The introduction of television brought us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through thousands of recipes just like those on this site. |
