1 lb apricots, peeled and pitted
3 cup alcohol, cooking
2 cup sugar
1 lemon rinds, grated
Directions

Boil the sugar in enough water to make a syrup; add the apricots and
simmer for several minutes. Strain and allow to cool. Add the
alcohol, 2 cups of water and the rinds; pour off into a bottle and
store for at least a month. Strain and re-bottle for future use when
ready.

The History of Recipes
Written cooking instructions as a concept can be observed back into history, at least as far back into recorded history as the early Egyptians, and possibly even further than that. In practice though, sadly, these early recipes were just basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to food historians are a few clay tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into The time of the roman empire around 25BC a man called Apicius compiled a few documents describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, main course and dessert, something we still use today. Aspicius recounts how the ancient Romans were skilled in the use of many different herbs, including a few that are still present in modern kitchens for example basil, rue and parsley. Over the next few hundred years, the wealthy families of the West competed with each other to serve up the most exotic banquets, and because of this cooks and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, verifying, and recording recipes common in their social group. When we get to the 1900s, cooking books were in high demand, mostly due to higher levels of literacy, people having more free time and having more money to spend. The arrival of TV brought us cooking programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like those on the site you are now reading. |
