The History of Recipes
Written cooking instructions as an idea can be traced back into ancient history, in truth as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, in the main part, these old recipes were just basic hieroglyphic instructions for preparing meals.
As we move into The time of the roman empire around 25BC a man called Apicius created some scripts which described recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, a style of dining still practiced today. This early Roman chef informs us how the Romans were skilled in the use of a wide range of spices, including many that are still in use today such as basil, mint and parsley. Over the following few centuries, the upper-class families of Europe tried to lay on the most extravagent banquests, and consequentially cooks and their recipe collections were much in demand. Even so, it was during the 1800s that fine cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, testing, and recording the recipes that were being prepared for the better households. The arrival of TV brings us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting everybody to access thousands of recipes just like those on this recipe site. |
