4 large artichokes
1 clove garlic
1/2 cup vinegar
1/4 cup oil
MUSTARD SAUCE
1/3 butter
1/3 mayonnaise
1/3 mustard
1/2 tsp salt
1/4 tsp pepper
Directions
Cut off top 1/4 of the artichokes. Fill a large pot 3/4 full with
warm water. Add garlic, vinegar,oil and artichokes. Cook over
medium-high heat for 45 minutes. Turn artichokes upside down on paper
towels until drained and cold. When cold, pull out center leaves,
spoon out core. Cut lemon in half, taking out lemon pulp. Mix
together sauce ingredients and spoon into hollowed out lemon halves.
Push lemon halves into the top of hollowed out artichokes. Tear off
artichoke leaves, dip in sauce and enjoy. From: Syd's Cookbook.

The History of Recipes
We are able to trace the history of meal recipes far back into distant history, certainly as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, generally, these ancient cook books were just basic pictorial instructions for meal preparation.
As we move on, we find a couple of cookery books published in the 14th Century ; a recipe book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian curry that appears on menues today, but rather accounts of the types of meals eaten by the rich and wealthy people of that time. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods and spices from the holy land, such as basil and coriander. The introduction of these new culinary ideas led to a torrent in books on cooking, some of which still exist in private cookery archives. The revolution that is television gave us TV cooks and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes just like those on our site. |
