The History of Recipes
Transcribed cooking instructions as an idea can be tracked way back into ancient history, in fact as far into history as the Egyptians, and maybe further still. In practice though, mostly, these old cook books were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into Roman times around 25BC a man called Apicius assembled a few documents which described recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were separated into starters, main course and afters, something we still use today. Additionally, he informs us how the Roman cooks used many different aromatic flavours, including a few you will know like basil, fennel and parsley. For the centuries that followed, the powerful families of the West tried to serve up the most exotic banquets, and because of this chefs and their recipes were much in demand. However, it was during the nineteenth century that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collating, trying out, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, recipe books are increasing in popularity mostly due to higher levels of literacy, more spare time and having more disposable income. |
