1 lb asparagus, trimmed, and cut into 1-i
1 large baking potato, peeled and cut into 1/2-
1 medium yellow onion, peeled and cut into s, lim wedges
3 1/2 cup chicken broth
1/4 tsp ground mace
1/8 tsp ground nutmeg
1/2 tsp salt
1/4 tsp freshly ground pepper
6 tbsp freshly grated parmesan
Directions
PLACE ALL THE INGREDIENTS except cheese in a large saucepan. Bring the
liquid to a simmer over moderate heat, then adjust the heat so that it
bubbles gently. Cover the pot and simmer the broth for 30 to 35
minutes, until the vegetables are very tender. Cool the broth, still
covered, for 20 minutes. Puree the broth and the vegetables in
batches, in a blender or in a food processor fitted with the metal
chopping blade. Return the puree to the saucepan, set it over
moderate heat and bring the soup just to serving temperature. Ladle
the soup into heated bowls and top each portion with 1 tablespoon of
the Parmesan cheese.

The History of Recipes
It is quite feasible to track the history of written cooking instructions back into the far past, certainly as far into history as early Egypt, and possibly even further. However, generally, these ancient records were just simple hieroglyphic or cunieform recipes for preparing food.

Aspicius informs us how the ancient cooks used a good variety of spices, including some familiar names like thyme, mint and dill. During the following few centuries, the rich families of Wesstern Europe competed with each other to lay on the most extravagent meals, and as a result cooks and their recipe collections were much in demand. Nevertheless, it was during the 19th century that fine cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, testing, and writing down recipes to help cooks of their time. Like it or not, the introduction of TV brings us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes such as those found on this web site. |
