The History of Recipes
We are able to follow the history of written recipes far back into the far past, in truth as far back into history as pharonic Egypt, and maybe further still. Having said that, mostly, these ancient cookbooks were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to experts is a collection of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. During the time of the Roman Empire a roman called Apicius compiled a few documents which described recipes prepared by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, something we still use today. This early Roman chef recounts how the chefs of Roman times used a good variety of herbs and spices, including some that we all recognise for example bay, mint and dill. Over the following few hundred years, the rich and powerful families of Europe tried to lay on the most exotic banquets, and as a consequence, the best chefs and their collection of recipes became highly prized. However, it wasn`t until the 19th century that fine cookery and recipe books became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and writing down recipes common in their social group. By the arrival of the 20th century, cookery publications are increasing in popularity mostly due to more people being able to read, people having increased free time and disposable income. Like it or not, the introduction of television brings us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes such as those found on our web site. |
