The History of Recipes
Historians have proved the existence of recipes back into ancient history, at least as far as the early Egyptians, and quite possibly further than that. However, mostly, these ancient recipes were just very simple hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into The time of the romans 25BC a man called Apicius created some scripts describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the early Romans made use of a wide range of herbs and spices, including some familiar names for example basil, mint and parsley. Over the next few centuries, the upper-class families of Europe competed with each other to serve up the best banquets, and because of this the best chefs and their recipe collections were highly sought after. Even so, it wasn`t until the nineteenth century that cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and writing down the recipes of their peers. By the arrival of the twentieth century, cooking books are in high demand, due to higher levels of literacy, people having increased free time and being a little richer. The introduction of television brings us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes just like those on our web site. |
