CRUST
1 2/3 cup graham cracker crumbs
1 1/2 tsp cinnamon
2 tbsp sugar
6 tbsp butter, melted
FILLING
1 cup sugar
3 eggs, beaten well
24 oz cream cheese, softened
1/2 tsp vanilla
TOPPING
1 pt sour cream
3 tbsp sugar
1/2 tsp vanilla
Directions
Combine crust ingredients and pat into bottom and sides of pan. Beat
cream cheese thoroughly; add sugar gradually; add eggs in thirds; add
vanilla; pour into prepared pan. Bake at 375 for 25 minutes; remove
from oven and add topping. To prepare topping, whip sour cream; add
sugar and vanilla, and pour over cake. continue baking at 500 for 5
minutes. Important - chill at LEAST 24 hours.

The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into antiquity, in fact as far back as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, in the main part, these old records were just basic pictorial instructions for preparing food.
As we move into The time of the romans 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes cooked by the Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and afters, something we still use today. This early Roman chef recounts how the ancient cooks were skilled in the use of a good variety of aromatic flavours, including some familiar names such as basil, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from the East, including spices such as parsley and basil. These new foods and tastes prompted an eruption in manuscripts on cooking, most of which are kept safe in private cookery archives. By the time we get to the twentieth century, cooking books were greatly in demand as a result of increased literacy, increased leisure time and having more disposable income. |
