2 oz chinese barbecued pork
1/4 lb fresh or frozen peas
2 tbsp oil, preferably peanut
2 cup long-grain rice, steamed and chille, d
1 tsp salt
2 eggs, beaten
4 oz fresh bean sprouts
GARNISH
2 tbsp finely chopped scallions
Directions
CUT THE PORK INTO FINE DICE. Blanch the peas in a saucepan of boiling
water for about 5 minutes if they are fresh or 2 minutes if they are
frozen. Drain them in a colander. Heat a wok or large skillet until
it is hot. Then add the oil and wait until it is almost smoking. Add
the cooked rice and stir-fry it for 1 minute, and then add the
barbecued pork, peas and salt. Continue to stir-fry the mixture for 5
minutes over high heat. Next add the beaten eggs and bean sprouts and
continue to stir-fry for 2 minutes or until the eggs have set. Turn
the mixture onto a plate and garnish it with the scallions. Serve at
once, or let it cool and serve as a cold rice salad.

The History of Recipes
Food historians have traced the existence of recipes way back into the distant past, at least as far as the early Egyptians, and quite possibly further than that. However, in the main part, these ancient records were just simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move on, we have a couple of interesting cookery books dating from the 1300s - a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, they are nothing to do with the spicy food that is served today, but rather descriptions of the types of food prepared by the chefs of the rich. During the following few hundred years, the rich families of Wesstern Europe tried to serve up the most exotic banquets, and because of this chefs and their recipes were highly sought after. However, it was during the 1800s the formal cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and publishing recipes to help cooks of their time. The arrival of television brings us celebrity chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
