The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions back into the far past, certainly as far back as early Egypt, and possibly even further than that. In practice though, in the main part, these early cookbooks were just very basic hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered so far, according to historians is a collection of tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, we have a couple of interesting recipe books which appeared in the 14th Century : one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the indian curry that is familiar to us all today, but instead recipes for the types of food on the menues of the upper classes of those days. For the centuries that followed, the rich families of Wesstern Europe competed with each other to serve the most extravagent meals, and because of this cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy. When we get to the twentieth century, recipe publications are in high demand, due to more people being able to read, people having more free time and being a little richer. |
