The History of Recipes
Written recipes as a concept can be tracked way back into the far past, certainly as far back into recorded history as ancient Egypt, and maybe even further. Interesting though that is, sadly, these ancient cookbooks were just very simple hieroglyphic instructions for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to historians is a series of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a collection of documents detailing recipes prepared by his fellow Romans. He tells us how the roman meals were divided into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the cooks of his times made use of a good variety of spices and herbs, including some familiar names for example bay, rue and parsley. Later, there are a couple of recipe books which date from the 14th Century : a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, they are nothing to do with the curry that is served today, but rather recipes for the types of meals cooked for the upper classes of the period. Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from Arab cuisine, including coriander, parsley, basil and rosemary. These new culinary innovations was responsible for a surge in manuscripts on food, the majority of which still exist in private libraries. The arrival of television brought us TV cooks and the recipe books that accompanied them. And that brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on this site. |
