The History of Recipes

It is quite possible to track the history of transcribed cooking instructions far back into the far past, certainly as far back into history as ancient Egypt, and potentially, even further back. Interesting though that is, these, early records were just simple hieroglyphic or cunieform recipes for meal preparation.

The truth of the matter is, the oldest recipe in existence, according to experts is a collection of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`.

Progressing into The time of the romans around 25BC a roman called Apicius created some documents detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into appetizers, main course and desserts, something that is very familiar to us today. Additionally, he informs us how the Romans used a good variety of spices and herbs, including some that we all recognise for example bay, rue and asafoetida.

Later, in the 15th century, people returning from the crusades brought back a variety of foods and herbs from Arab cooking, including spices like parsley and basil. The introduction of these new culinary ideas led to a torrent in books on cookery, some of which still exist in private collections.

During the following few centuries, the powerful and rich competed to serve up the most exotic meals, and as a consequence, the best chefs and their recipe collections became highly prized. However, it was during the nineteenth century that cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and writing down the recipes of their peers.

By the advent of the 1900s, cookbooks were highly popular mostly as a result of more people being able to read, people having increased leisure time and disposable income.
