3 tbsp oil
1 large onion, sliced into rings
1 medium chicken, cut up
3 garlic clove
1 tbsp shrimp paste
2 tsp sambal oelek
1/2 tsp turmeric
1 3/4 cup coconut milk (thin)
1 tsp sugar, brown
2 tbsp lemon juice
1/4 lb shrimp, peeled
1 tbsp coriander
Directions
Dry the chicken. Heat the oil in a wok, then stir fry the onion. Add
garlic, shrimp paste, sambal, turmeric, salt and pepper. Stir-fry a
few seconds, then add the chicken. Stirring constantly, add the
coconut milk. Bring to a boil, then reduce and simmer gently for 30
minutes.
Remove the chicken, and leave sauce. Boil until it thickens, then add
sugar and lemon juice. Add shrimp and cook for about 3-4 minutes...
until cooked. Serve with chicken coverd in sauce and decorate with
coriander.

The History of Recipes
We are able to track the history of written recipes back into antiquity, at least as far as early Egypt, and maybe even further. Interesting though that maybe, sadly, these old cook books were just simple hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the romans around 25BC a man called Apicius assembled some documents describing recipes enjoyed by the Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the ancient chefs were skilled in the use of many spices and herbs, including many that are still in use today like basil, rue and dill. Later, in the fifteenth century, the Crusaders brought back many foods and herbs from the holy lands, including spices such as coriander, parsley, and basil. These new spices and herbs created an explosion in recipe books, some of which still exist in academic collections. The revolution that is television brought us cooking programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on this site. |
