The History of Recipes

Recipes as a concept can be found way back into distant history, in fact as far back into recorded history as ancient Egypt, and quite possibly further than that. Having said that, sadly, these old recipes were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.

In an interesting twist, the most ancient recipe in existence, according to Professor Solomon Katz, are a few ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful.

Progressing into Roman times 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the meals were divided into starters, main meal and desserts, something that is very familiar to us today. Additionally, he tells us how the Romans were skilled in the use of a good variety of spices, including some familiar names like thyme, fennel and asafoetida.

Later on, in the 15th century, knights returning from the crusades brought back a variety of spices and herbs from Arab cooking, including spices like parsley, basil and rosemary. These new spices and herbs was responsible for an explosion in books on cooking, some of which still exist in academic collections.

When we get to the twentieth century, cookery publications were greatly in demand mostly due to more people being able to read, people having increased free time and being a little richer.

The TV revolution brings us TV chefs and the recipe books that accompanied them.

Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes such as those found on this web site.
