The History of Recipes
Academics have traced the existence of recipes back into antiquity, in truth as far back into history as early Egypt, and maybe further still. Having said that, mostly, these old records were just simple hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe found, according to experts is a series of tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a man called Apicius compiled a collection of documents which described recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Aspicius also informs us how the cooks of his times were skilled in the use of many different aromatic flavors, including some that we all recognise such as basil, rue and parsley. Over the next few centuries, the powerful families of Europe tried to serve the most extravagent meals, and as a result the best cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cooking books were increasing in popularity mostly as a result of increased literacy, people having more leisure time and disposable income. |
