The History of Recipes

Transcribed cooking instructions as a concept can be tracked back into the distant past, in fact as far back into history as the Egyptians, and potentially, even further back. Having said that, mostly, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.

In an interesting twist, the most ancient recipe in existence, according to experts in ancient history is a series of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful.

During the time of the Roman Empire a man called Apicius compiled a few scripts which described recipes enjoyed by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main course and desserts, something we still use today. Aspicius also recounts how the cooks of Roman times used a wide range of herbs and spices, including a few that are still present in modern kitchens such as thyme, fennel and asafoetida.

As our culinary historical trip moves on a few more years there are two interesting recipe books dating from the 1300s : one book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the indian curry that is familiar to us all today, but instead recipes for the types of food on the menues of the rich and powerful of those days.

In the fifteenth century, the Crusaders brought back many new spices and herbs from Arab cooking, including spices such as basil and rosemary. These new foods and tastes prompted a torrent in books on cookery, most of which are now in private libraries.

Over the following few hundred years, the wealthy families of Wesstern Europe tried to serve up the most exotic banquets, and as a consequence, chefs and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century that fine cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, verifying, and recording popular recipes of the day.

By the arrival of the 20th century, recipe publications are increasing in popularity mostly due to more people being able to read, leisure time and having more money.

The introduction of television brought us celebrity chefs and the accompanying recipe books.

Which brings us neatly to the present day and the internet revolution, allowing everybody to search through thousands of recipes just like those on our web site.
