The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into history, certainly as far back into history as the early Egyptians, and quite possibly further than that. Having said that, generally, these early recipes were just primitive hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to food historians is a collection of ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Moving on, there are a couple of recipe books from the fourteenth century - a book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the indian curry that is popular today, but rather descriptions of the types of food on the menues of the rich and wealthy people of the period. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from middle-east cuisine, including coriander, parsley, and basil. The introduction of these new foods and spices created an eruption in recipe books, many of which are now in academic collections. During the following few centuries, the wealthy families of the West competed to serve the best banquets, and because of this the best cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the 19th century that cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collating, trying out, and publishing popular recipes of the day. By the advent of the 1900s, cooking books were highly popular due to higher levels of literacy, more leisure time and having more money to spend. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
