The History of Recipes
Experts have proved the existance of recipes far back into distant history, at least as far as ancient Egypt, and maybe even further. Having said that, in the main part, these ancient cookbooks were just basic pictorial instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts is a series of ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a number of documents detailing recipes cooked by wealthy Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvres, main meal and desserts, a very modern way of dining. He also describes how the early Romans made use of many herbs, including many that are still in use today like thyme, fennel and asafoetida. In the 15th century, knights returning from the crusades brought back many foods and herbs from the holy land, including spices like coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused an eruption in books on cooking, the majority of which are kept safe in private libraries. Over the next few hundred years, the upper-class families of the West competed to serve up the most extravagent meals, and consequentially the best chefs and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century that fine cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, verifying, and recording recipes that were common in the better off homes of the day. The arrival of TV brings us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on the site you are now reading. |
