The History of Recipes

We can trace the history of meal recipes way back into distant history, at least as far back as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, generally, these early cookbooks were just primitive pictorial instructions for preparing meals.

In fact, the oldest recipe found, according to experts are some clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful.

Later on, in Roman times around 25BC a roman called Apicius assembled a few documents detailing recipes cooked by wealthy roman citizens. In his publication, he recounts how the roman meals were divided into hors d`oeuvre, main meal and afters, something we still use today. He also informs us how the cooks of his times used a wide range of spices and herbs, including a few that will be familiar to modern cooks for example thyme, fennel and parsley.

Later on in the 1400s, knights returning from the crusades brought back many foods and spices from the Middle-East, including spices such as coriander, parsley, and basil. These new spices and herbs caused an explosion in manuscripts on cooking, most of which are now in private libraries.

For the next few years, the upper-class families of Wesstern Europe competed to offer the most extravagent banquests, and as a result chefs and their recipes became highly prized. Even so, it wasn`t until the 19th century that formal cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, testing, and publishing recipes of the day.

By the advent of the twentieth century, cookery publications were in great demand, as a result of increased literacy, more spare time and disposable income.
