The History of Recipes
It is possible to follow the history of written recipes way back into history, certainly as far into history as the ancient Egyptians, and maybe further still. Interesting though that is, in the main part, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered so far, according to historians are some stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Progressing into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts describing recipes cooked by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, main course and dessert, something we still use today. Aspicius also informs us how the ancient Romans used many herbs and spices, including a few that will be familiar to modern chefs like thyme, mint and dill. Later on in the 1400s, knights returning from the crusades brought back many spices and herbs from middle-east cuisine, including rosemary and coriander. These new foods and tastes caused a torrent in recipe manuscripts, most of which are now in private collections. For the centuries that followed, the rich and powerful families of Europe competed with each other to lay on the most exotic banquets, and because of this the best cooks and their recipe collections were greatly in demand. However, it wasn`t until the nineteenth century that fine cookery and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, verifying, and publishing recipes to help cooks of their time. The introduction of the TV brings us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like the ones you can find on our web site. |
