1/2 cup chopped red onion (about 1/2

1 tbsp olive or vegetable oil
2 tsp lemon juice
2 tsp cider vinegar
1/2 tsp salt
1/4 tsp pepper
2 cloves garlic -- finely
1 chopped
1 (about 1 teaspoon)
1/3 cup chopped green onions (about
5 medium)
Directions
Heat oven to 350 F. Spray 9-inch square baking dish, with nonstick
cooking spray. Mix all ingredients except green onions. Spread evenly
in baking dish. Bake uncovered 40 to 45 minutes, stirring
occasionally, until vegetables are tender and golden brown. Sprinkle

The History of Recipes
It is possible to trace the history of written recipes far back into the far past, at least as far back into recorded history as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, generally, these early records were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe in existence, according to academics is a collection of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. As our culinary historical trip moves to more modern times there were a couple of recipe books which were published in the fourteenth century - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these books are unconnected to the indian food that is familiar to us all today, but rather descriptions of the types of meals prepared for the rich and wealthy people of that time. In the 15th century, people returning from the crusades brought us a variety of foods and herbs from the Middle-East, including spices like coriander, parsley, and basil. The introduction of these new tastes created an eruption in recipe publications, many of which are now in academic collections. Over the following few centuries, the rich and powerful families of Wesstern Europe competed to serve the most extravagent meals, and as a result the best chefs and their recipes were highly sought after. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collating, testing, and recording popular recipes of the day. When we get to the 1900s, cookery books were highly popular mostly as a result of increased literacy, people having increased spare time and being a little richer. The arrival of TV brings us TV cooks and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing us all to access massive numbers of recipes like those on this recipe site. |
