1 tbsp olive or vegetable oil
2 tsp lemon juice
2 tsp cider vinegar
1/2 tsp salt
1/4 tsp pepper
2 cloves garlic -- finely
1 chopped
1 (about 1 teaspoon)
1/3 cup chopped green onions (about
5 medium)
Directions
Heat oven to 350 F. Spray 9-inch square baking dish, with nonstick
cooking spray. Mix all ingredients except green onions. Spread evenly
in baking dish. Bake uncovered 40 to 45 minutes, stirring
occasionally, until vegetables are tender and golden brown. Sprinkle

The History of Recipes
It is possible to trace the history of `recipes` way back into antiquity, in truth as far back into recorded history as pharonic Egypt, and possibly even further. Interesting though that maybe, mostly, these early cook books were just simple pictorial recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Later, there were two interesting cookery books which were published in the 1300s - a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Although the titles sound familiar, these books are unconnected to the curry that is popular today, but rather recipes for the types of food prepared by the chefs of the rich and powerful of the period. Later, in the fifteenth century, people returning from the crusades brought us many new foods and herbs from Arab cuisine, including spices such as coriander, basil and rosemary. The introduction of these new herbs and spices created an eruption in publications on food, many of which still exist in private libraries. During the following few hundred years, the rich and powerful families of Europe tried to serve the most extravagent meals, and because of this chefs and their recipes were highly sought after. Even so, it wasn`t until the 19th century that fine cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, trying out, and writing down recipes for their fellow cooks to enjoy. The arrival of television brings us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes such as those found on sites such as this. |
