The History of Recipes
Historians have proved the existance of recipes back into distant history, in truth as far back into history as early Egypt, and maybe even further. However, mostly, these early cookbooks were just very basic hieroglyphic or cunieform recipes for preparing food.
During Roman times around 25BC a man called Apicius compiled some documents which described recipes enjoyed by his fellow Romans. In his publication, Apicius tells us how the meals were separated into starters, main meal and desserts, something that is very familiar to us today. Aspicius recounts how the ancient cooks used a wide range of aromatic flavors, including a few you will know like bay, rue and asafoetida. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from the Middle-East, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in recipe books, some of which still exist in private collections. By the arrival of the 1900s, recipe books were increasing in popularity mostly as a result of increased literacy, leisure time and having more money to spend. |
