The History of Recipes
Food historians have proved the existance of recipes way back into the far past, certainly as far back as pharonic Egypt, and possibly even further than that. However, these, early cook books were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
During the time of the Roman Empire a roman called Apicius assembled a collection of scripts describing recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a style of dining still practiced today. He also informs us how the early Romans were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks for example basil, mint and dill. In the fifteenth century, knights returning from the crusades brought back many foods and spices from middle-east cuisine, such as coriander, basil and rosemary. The introduction of these new foods and spices prompted an increase in publications on food, many of which still exist in private collections. By the arrival of the 20th century, cooking books are in high demand, as a result of higher levels of literacy, people having more spare time and being a little richer. |
