The History of Recipes
Academics have traced the existence of recipes far back into the far past, at least as far back as ancient Egypt, and quite possibly further than that. In practice though, these, ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals were separated into appetizers, main meal and afters, a style of dining still practiced today. This early Roman chef describes how the Roman cooks used a wide range of spices and herbs, including some familiar names such as basil, mint and parsley. In the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, such as basil and rosemary. These new spices and herbs led to an eruption in cookery books, many of which are kept safe in private collections. By the arrival of the twentieth century, cookery publications are greatly in demand as a result of more people being able to read, more free time and having more money. |
