1 lb chicken breast, boneless & skinned
2 tsp virgin olive oil
6 tbsp dry white wine
1/4 cup lemon juice
2 tsp leaf tarragon, dried
2 tsp leaf basil, dried
1/2 tsp hot red pepper flakes
Directions
Preheat the oven to 350 degrees. Trim any fat from chicken breast and
pound lightly between two sheets of waxed paper to flatten. Coat with
olive oil and place in a baking dish. Add wine, lemon juice, herbs
and and pepper flakes, turning chicken to coat both sides. Cover dish
with foil. Bake 25 to 30 munutes, until chicken cooked through.

The History of Recipes
We can track the history of `recipes` back into distant history, in fact as far back as the Egyptians, and quite possibly further than that. Interesting though that is, these, old records were just very simple hieroglyphic instructions for food preparation.
Later on, there are some interesting books from the fourteenth century : a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these books have no connection with the spicy food that is familiar to us all today, but instead accounts of the types of meals prepared by the cooks of the rich and powerful of the period. Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab countries, including coriander, parsley, basil and rosemary. The introduction of these new culinary ideas caused an explosion in books on cooking, most of which are now in private cookery archives. The introduction of the TV brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes just like those on the site you are now reading. |
